Paring Knives

After your chef knife, this should be the second knife you purchase! A good 3.5" standard curved paring knife is what we always recommend. I have 4 at home: a Wusthof Classic forged 3.5" which is sharp and strong, and couple cheap Victorinox paring knives which are awesome despite being ridiculously affordable, because they're flexible which I really love since it allows you to work around curves... I use them daily for trimming broccoli, bell peppers, apples, bananas, etc.
