Super-handy and good looking traditional beechwood-handle vegetable peeling knife. The 7cm (2.75-inch) stainless steel blade is thin, sharp, and just flexible enough. 

Sandvik 12C27 modified stainless steel. It is anti-corrosive thanks to the addition of chrome and requires no special maintenance other than normal cleaning and drying (NO dishwasher!) Its carbon content of at least 0.40% gives excellent cutting edge.
